JOB TITLE: Production Operator
DEPARTMENT: Meat/Production/Sanitation
REPORTS TO: Lotus Production Supervisor
LOCATION: Torrance, CA

JOB OVERVIEW
The Production Operator is responsible for multiple functions within the Lotus Natural Pet Food Plant. One for the production of a variety of Lotus Natural Pet Foods. Two for the labeling and packaging of a variety of Lotus Natural Pet Foods, and three for the sanitation of the packing equipment used for production. The Production Operator is a support role for several areas of manufacturing, including but not limited to; the Production Department, the Labeling/Packaging Department, the Maintenance/Sanitation Department, and the Raw Meats Department.

RESPONSIBILITIES

Production:
• Set up, operate, adjust, clean, sanitize and shut down filling machinery
• Set up, operate, adjust, clean, sanitize and shut down can seaming machinery
• Perform changeovers on machinery when necessary
• Responsible for the safe handling of food products and ensures all paperwork and process data is filled out completely and accurately to include lot identification
• Responsible for preparing raw meats, proteins and ingredients for production batches.
• Identify and inspect raw meats against specifications to identify non-conformity to ensure consistent quality
• Identify and inspect ingredients and additives, both powder and liquid, against recipes and specifications
• Comprehend meat rating specifications
• Insure FIFO is observed when requesting or removing inventory for batch preparation
• Inspects raw meat processing equipment and verifies operational status and cleanliness.

• Responsible for in-process checks and on-line documentation of batch records and logbooks.
• Maintains a safe, healthy, and sanitary work environment by following GMP standards and procedures.
• Interprets batch sheet directions and ensure formula/recipe meat ingredients are within variance parameters.
• Verifies proper materials per recipe, weight and SOP
• Assists in break out duties as required
• Reviews production schedule each day with supervision to determine needed materials
• Execute daily production goals, standards and weekly production schedules per the direction of supervision
• Comply with all company Quality, HACCP, GMP and Food Safety Standards
• Comply with all company safety policies and procedures
• Complete required production documentation including lot tracking, testing logs, QA forms and production reports.
• Operate pallet jacks and other material handling equipment
• Identify and communicate problems and production issues in a timely manner
• Interpret and adhere to all Standard Operating Procedures/Recipes and Formulas
• Other duties as assigned

Labeling/Packaging:
• Responsible for the safe handling of food products and ensures all paperwork and process data is filled out completely and accurately to include lot identification
• Responsible for preparing the packaging and labeling line to label, tray package and shrink wrap finished goods cans
• Identify and inspect trays against specifications
• Identify and inspect all labels against specifications
• Comprehend FDA Packaging requirements and specifications
• Inspects packaging line processing equipment and verifies operational status and cleanliness.
• Set up, operate, adjust, clean, sanitize and shut down packaging line machinery to include:
a. Burt Horizontal Roll Through Label Machine
b. Staban Tray Packaging Machine
c. Markem Imaje Date Code Printer
d. Tray Turner
e. Staban Shrink Tunnel Machine
f. Cousins Pallet Wrap Machine
g. Line Conveyor Settings
• Responsible for in-process checks and on-line documentation of labeling records and logbooks.

Sanitation:
• Keep all production and receiving areas clean by cleaning and sanitizing processing equipment and maintaining the areas in accordance with approved quality and sanitation procedures.
• Clean processed product, lint, dust, oil, and grease from all production equipment, removing parts as needed and putting the equipment back together for all production lines. Also responsible for cleaning overhead pipes, and conveyors.
• Clean all processing tanks and vats, as well as cleaning or changing out filters as required.
• Assist with maintaining daily operational production efficiency and sanitation duties. Assist with maintenance of all sanitation related equipment.
• Clean floors, walls, vents and drains using cleaning and sanitation chemicals as required, transporting trash and other waste to the proper disposal area.
• Maintain overall hygienic condition of facility and all production equipment.
• Perform all chemical testing associated with sanitations and operate all cleaning / sanitizing equipment.
• Maintain factory Brush Program per Standard Operating Procedures
• Complete Sanitation Logs daily for appropriate equipment and or areas
• Comply with all GMP, Safety Procedures, Company Policies, Quality Policies, and Hazard Analysis and Critical Control Points as they apply to this position.
• Demonstrate knowledge and ability to use common hand and power tools required for job.
• Demonstrate knowledge and ability to disassemble and reassemble machine guards, panels, pipes & fittings, belts, hoses, and various other machine components.
• Demonstrate knowledge and ability to read machine sanitation SOP’s and perform required component checks.
• Demonstrate knowledge and ability to perform specialized cleaning and sanitation procedure that are performed during machine disassembly.
• Properly wears personal protective equipment as required and provided by the company. Wears appropriate uniform/clothing in accordance with GMP's/company standards.
• Ensures safe and proper use of tools and equipment; ensures hand tools are free of defects; maintains neat and orderly work area, including proper storage/disposal of solvents, paints, and other cleaning chemicals in accordance with OSHA, EPA and other regulatory agencies and company policy.
• Maintains current knowledge of cleaning methods and procedures.
• Communicates/coordinates with other departments to ensure optimum, efficient utilization of non-running time to properly sanitize the company's equipment.
• Practices and complies with all company policies and procedures, including safety and other work rules; includes compliance with all regulatory mandates, such as lockout/tag out, electrical safety, confined spaces.
• Performs other duties as assigned, including assisting other members of the team where needed (breakdowns, emergencies, etc.)
• Responsible for reporting and taking any necessary action to prevent food safety and food quality problems from occurring.
• Responsible for following and enforcing procedures outlined in the HACCP Plan and the Quality Systems Manual and any other programs that support the Quality System and other 3rd party audits

SCOPE DATA
• This position will ensure that the equipment and facilities in all Production areas are properly cleaned, sanitized and reassembled and production ready
• This position will ensure personal safety and provide protection and safeguarding of all company issued equipment and machinery used in daily operations
• The position must ensure production goals and standards are met while maintaining the highest level of product quality

• Carries out all responsibilities in accordance with Lotus policies, procedures and applicable laws

WORKING RELATIONSHIP
• Must have an attention to detail methodology
• Must perform in a high volume, extremely fast paced environment and be accurate to perfection
• Though reporting to a Production Supervisor, individual should be able to work independently upon task assignment
• Must be able to work seamlessly with others on an in-line production team
• Cross train into other production areas as required and defined by the Production Manager

QUALIFICATIONS REQUIRED
• Strong written and verbal communication skills required
• Basic computer skills to operate computer automated equipment
• Basic math skills – add, subtract, multiply and divide
• Read and interpret all weights of measurement
• Excellent interpersonal skills – must be a team player
• Must have an excellent work ethic and be a self-starter
• Must be able to identify CCP’s(Critical Control Points) in the Packaging area and maintain all GMP(Good Manufacturing Practices)
• Ability to lift up to 75 pounds
• Must be able to stand, sit, bend and kneel for extended periods of time
• Forklift Certification

EXPERIENCE
• Basic knowledge or understanding of a manufacturing environment – direct manufacturing
experience not necessary
• Machinery/mechanical background and knowledge preferred
• Prior forklift experience preferred, but not mandatory.
• Prior food manufacturing, compounding, blending, cooking and preparation, labeling and packaging experience is
preferred, but not mandatory.

EDUCATION
• High School Diploma or G.E.D. is required

Compensation: $13.25 to $15 an hour DOE.
